Congealed fat and drippings' substance seems to accumulate beyond my ability to put them to good use.

That's not going to be considered tallow or lard. Too impure and not likely hard enough at room temp to fit the definition.

You make tallow and lard by trimming and rendering raw intermuscular fat. Leftover oil from cooking is not the same thing. There are different methods but I prefer grinding the fat and putting it in a double boiler for several hours.
