If it's recessive you might get some 4 legged grandchicks and you're off to the races

Yeah. But that would require incest between the 2nd gen chickens

They do that all the time with animal breeding lol, purebred is just an euphemism for "critter created for special traits using incest" :D

Yeah sure. But if this is evolving into a new species a small genepool will definetly be a bad for the survival chances

It always is. But it's artificial selection so it has better chances then natural selection. Also if you look up 4 legged chickens on Google there are a more than you would think. I'm going to buy them all and start my 4 legged chicken farm!
