The dude in a chef's hat at 2:45 looks like he's defying gravity.

If it weren't for the crowd as a reference point, I would've assumed it was a camera trick.

I think the clip with the chef’s hat guy starts right after he runs and jumps on the table. So when the clip starts, he is still sliding forward. But the table is slanted, so gravity is pulling him down. He makes use of that while dancing.
