I can't speak for Canada, but I imagine it works about the same way as America. Very roughly, in america, if you buy stock for $1 and sell it for 1.50, you earned 0.50. You would be taxed on that 0.50 the year you sold the stock. Now replace stock with Crypto currency.

Until you sell, you do not owe tax. But you need to keep track of how much you purchased the crypto for and when. The service you used to buy it should have this info readily available. And you'll probably need a tax accountant to help you do the taxes on it.
