Looks to me like a hackberry, C. occidentalis! I’m not great with woody species out of my state though!

diastatic powder has active enzymes that convert a little bit of starches to sugar during proofing. this helps with oven spring, browning, and a few other things! modernist pantry has some good videos about it on youtube. if i understand correctly, non-diastatic is missing the enzyme and gives malt flavor

i used peter reinharts recipe (on epicurious). this was the first time using diastatic malt powder in the dough instead of malt syrup and they turned out really well! i also have been using the trick of rolling some tea towels in a baking dish with some water for oven steam. i am one step closer to the perfect bagel!

hello! i’m a (recently graduated) grad student in the US studying bees and can say as long as you are in a temperate location (i think you are in the UK?), she likely just hit the end of her life span. assuming you found her in spring of 2020, she would have been born the previous fall of 2019. while bumble bee queens do in fact hibernate, they only do so once soon after being mated and selecting an overwintering site. the founding queen dies with the rest of the colony she created in the fall. i know this must be a sad time, but i can tell you that she lived out her full life span of just about 1 year. whether her wings were damaged by virus/parasite or plain physical harm in the wild, its very impressive you were able to nurse her to her natural ending point.
