I've been doing it for quite a while now, please do check Dr. Gillman's pages, as a lot of the Web sites are way overly cautious, and based on old food-preparation methods, from fifty to sixty years ago, when MAOIs and TCAs ruled much as dinosaurs once did, before SSRIs and mammals, respectively, took over.
I can tell you that mozzarella is completely fine - no aging. It's fermenting and aging and over-ripeness largely. Too much tyramine.
Certainly no craft beer, nothing with visible sediment, no artisanal cheese. And remember that small portions are quite often OK, also - it's the total amount of tyramine that you ingest.

Yes, I've had a similar experience, and my brother even more so. Generally as you really take the few memories you have seriously, others come - it's like that part of you is holding back until you are more ready.
