fascinating. I'm sure there is lots of variation; the Italian language wasn't really standardized at all until radio and television spread it. I've only ever heard sugo used to describe a meatless tomato sauce. What italian-Americans call gravy is referred to as ragù in most modern dialects (with variations like ragù bolognese, or ragù napoletano), but i wouldn't be surprised if that was not the case in the past.

ragù, not sugo. sugo more directly translates to sauce, as it doesn't have meat. the issue is that English doesn't have a word that adequately translates ragù, which is a slow cooked meat sauce (with wild regional variations, naturally)
